A few weeks back, I shared the story of a teapot maker in Chaozhou who was taking the Chaozhou tea traditions forward into the new era. This time, we are back again in Chaozhou, because any time is tea time in this beautiful town in China.

Experience authentic Chaozhou tea culture through traditional gongfu brewing, exploring ancient teahouses, dancong oolong production, and the meditative ritual that connects communities over small cups.

Tea Journey writer, Adeline Teoh, had been on a trip to Chaozhou, the epicenter of Phoenix Dan Cong, and experienced the local tea traditions and culture first-hand. Previously, she had shared the story of Yujian Cai, a potter with a keen interest in Qing Dynasty pottery. His family has a history in ceramics. He works almost exclusively with Chaozhou Red Clay and is also passionate about making Gongfu-style tea pets.

Chaozhou is the epicentre of Phoenix Dan Cong (Fenghuang Shan), a diversely aromatic oolong. Discover how Yujian Cai, with his family history in pottery, is shaping the future of Chaozhou tea traditions and culture, taking them forward into the new era.

The first part of the three-part Chaozhou series features Huang Han, a tea producer in the region who has pioneered the production of organic tea. It showcases the challenging yet rewarding journey of making his estate organic, producing some very fine organic Dancong Oolong.

In the Phoenix Mountains in China, the Dancong Oolong reigns. We meet 33 year old Huang Huan who chose to return home to take over his family tea farm. He has made it his mission to produce only organic oolong from his 10,000 trees. Harvesting once a year – spring – he has set out to create a model for other farmers to follow, in the pursuit of high-quality tea.
